For some reason, my son is loving mini marshmallows these days. As I was opening the bag, I noticed a recipe for this Watergate Salad that sounded interesting. I have never had it before, but it reminded me of the days of ambrosia and jello salads served at potlucks or a 1950's bridge club luncheon. Anyways, I decided to make it low-fat style and it turned out actually quite well. Apparently, it was created by Kraft Foods, Inc. in 1975 and was originally called "Pistachio Pineapple Delight" until a food critic renamed it a Watergate Salad in her food column. It is quite enjoyable- it might be a fun thing to bring over someones house when invited for lunch or dinner. It looks fun and the kids would love it.
- 1 (3.4 ounce) package instant pistachio pudding mix
- 1 can crushed pineapple, with juice
- 1 cup miniature marshmallows
- 1/2 cup chopped pecans
- 1/2 (8 ounce) container frozen fat-free whipped topping, thawed
In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in fat-free whipped topping. Chill for an hour before serving.
